Blueberry Banana Muffins

Delicious, easy to make muffins that are the hit of any breakfast table..

My family loves breakfast. Somewhere down the line, I managed to spoil them with baked treats every morning instead of the standard cheerios. Buying baked treats for breakfast can get kind of costly, and I don’t always get to the store in time, so I have learned to start making my own baked treats with what was in our pantry and fridge. This is how I came up with the recipe for Blueberry Banana Muffins. They are super easy to make, my son loves to help make them, and it is easy to have baked goods on hand.

These are not only easy, but they are delicious! They take only about 10 minutes to whip up and 20 minutes in the oven. How easy is that? And since they are super simple to make, they can be an afternoon “craft” for my toddler and preschooler. They love to work on measuring and the batter is pretty easy to mix.

Now you can just grease the pan really well, but I like to use muffin cup liners. They are easier for my kiddos to handle when eating, and they add a little fun, depending on what liners you use. I have also found that the good old fashioned metal muffin tins cook much more evenly and quickly than the silicone pans. And if you use the liners, cleanup is a breeze.

If you are don’t have either fruit on hand, or want to jazz up your muffins, pretty much any fruit will work well. Take some time to be creative, or use up any fruit that is starting to fade. You can also go seasonal, maybe add apple pieces in the fall?

Blueberry Banana Muffins

Blueberry Banana Muffins


  • 1 3/4 c Flour
  • 1/2 c Sugar
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 Egg
  • 3/4 c milk
  • 1/4 c cooking oil
  • 1 tsp vanilla
  • 1 mashed banana
  • 1 c blueberries
  • 1 tbs lemon zest
  • 1/4 c brown sugar


  1. Preheat oven to 400 F. Line 12 regular muffin cups with bake cups.
  2. In a medium bowl, combine all dry ingredients except brown sugar.
  3. In a second bowl combine egg, milk, oil, vanilla, and bananas. Once well mixed, fold into dry mixture. Once well incorporated, fold in blueberries and lemon zest.
  4. Fill muffin cups 2/3 full.
  5. Sprinkle brown sugar over tops of batter.
  6. Bake for 18 to 20 minutes. Remove from pan and cool.
