I love the fall, especially now that we are in New England. Sweater weather and a slight chill in the air. There is something just perfect in watching the leaves change color and cuddling in a warm blanket before the snow comes. This is the perfect time for some Bourbon Vanilla Pumpkin Spice Waffles.
Along with my favorite holiday, there are so many fun things that come along with fall. This includes Pumpkin Spice EVERYTHING. I know, it can be a tad bit overused, but my favorite way to have pumkin spice is in breads and baked goods. And my family’s absolute way to have pumpkin spice is in WAFFLES.
I have scoured the internet to find the best pumpkin spice recipes, but I always found that they didn’t have quite the right flavor. They usually have lots of pumpkin, and well, spice, but nothing else to elevate the flavor. And then I stumbled upon something in my cupboards that just took my waffles to the next level – Bourbon Vanilla! This is a perfect accompaniment to the spicy earthyness of pumpkin spice, and adds a little kick to your waffles without making them overly sweet.
Now you can add individual spices for Bourbon Vanilla Pumpkin Spice Waffles, but I find that pre-made pumpkin pie spice works just as well.
These are best served with New England Maple Syrup, but my husband also loves them with creamed honey and butter. Either way, they are best served warm, straight from the waffle iron. My favorite waffle iron is the Proctor Silex Belgian Waffle Baker. They make smaller, square waffles, which are perfect for the kids, and as long as you follow the instructions, the waffles come out perfect every time.
