I have to admit something. I may be a bacon addict. I think pretty much everything tastes better with bacon. How can you beat crispy, yummy, deliciousness? Nothing is better than a freshly cooked piece of bacon – any time of day.

Bacon is also a great way to add oomph to your dishes. I mean, how can you go wrong? Add a little bacon to your baked potatoes, wrap it around some dates, you can even go crazy and add bacon to many of your favorite dishes. The possibilities are endless.

But my absolute favorite way to consume bacon is with cheese. And more to the point, I love it spicy with cheese. Which is why I absolutely love these Jalapeño Bacon Bombs, they are just a mix of my favorite things – bacon, cheese, and spicy things.

They are super easy to make, and don’t require a ton of fancy technique to make – the most important thing you need to do is consume them right out of the oven – when they are the yummiest!

Jalapeño Bacon Bombs


  • 3 slices bacon
  • 6 fresh Jalapeños
  • 1/2 cup shredded Mexican Cheese, divided
  • 2 TBS Cream Cheese
  • 2 TBS Sour Cream
  • ½ TSP Mexican Seasoning (McCormick makes a great blend)


Preheat Oven to 400°F. Spray a baking pan with nonstick spray.

Place slices of bacon in a skillet and cook on medium heat until they are cooked just enough to release the extra fat and start turning color. Don’t let them crisp. Take them out of the pan and slice crosswise and lengthwise, creating 4 pieces out of each slice.

Mix ¼ cup cheese, cream cheese, sour cream and Mexican seasoning in a small bowl. Slice the jalapeño in half and remove membranes and seeds. Fill each half with the cheese mixture. Place filled jalapeños in pan. Place each piece of bacon over the cheese filling and sprinkle remaining shredded cheese over the filled jalapenos.

Place in oven and bake for approximately 10 minutes, or until cheese is melted and starts to brown, and the jalapeños start to lose their color.

Serve straight out of the oven.
