These Jalapeno Poppers are baked, instead of breaded and fried, but still give you the bite and cheesiness.
- 6 Jalapenos
- 1/2 cup Crema Mexicana (or sour cream)
- 1/2 cup Fat Free Cream Cheese
- 3/4 cup 2% Milk Mexican Blend Cheese (or 1/2 monterey jack, 1/2 cheddar grated)
- 1 tbs Cumin
- 1 tbs Italian Seasoning
- Cooking spray.
- Preheat oven to 400 degrees. Slice jalapenos lengthwise. Clean out seeds. Place in a shallow baking dish sprayed with cooking spray. Mix the Crema Mexicana, cream cheese, and half of the shredded cheese and seasonings. Using a spoon, place enough of the filling to fill the barrel of each sliced jalapeno. Sprinkle rest of shredded cheese over each filled jalapeno. Place in oven for 40 minutes. Then, raise the temperature to low broil and broil for 2-3 minutes more. Remove from oven when the tops are slightly brown. Poppers are best served straight from the oven. Enjoy!
