Quick and Easy Steak Dinner | The Halfway HomemakerI wanted to have a nice dinner for my husband last weekend. He was having a hard week and steak always makes him feel better. This took me about 30 minutes to prepare and my husband basically licked his plate clean.

I was inspired by The Trophy Wifestyle’s awesome tutorial on how to cook steak in a cast iron skillet. So I got myself a nice cast iron skillet (from Target, of course!), some juicy steaks and some great veggies.

I followed CourtneyLynne’s directions using Lawry’s seasoning salt and fresh ground pepper. The results were amazing! I have never been great at cooking steak, either the piece is walking off the plate or charred to a crisp. But this was perfect, my husband likes his a little more done, so I left his in 30 seconds longer. The kitchen was a little smoky, but it smelled so good.

To round out the meal, I created some simple fake-spiral sliced potatoes (just use your knife to slice almost all the way through the potato in thin strips). These are great because whatever topping you put on them gets all the way to the insides. Just pop the potatoes in a 450 degree oven for 15-20 minutes.

I also got some great steam in bag fresh green beans. I microwaved them and added them to onions and mushrooms that had been cooked in the cast iron pan after I finished cooking the steak. I added a little red wine and the green beans after the onion was soft and cooked on medium for a few minutes to get the flavor.

The bread was take and bake from the market, and the piece de resistance – blue cheese butter.

To make the butter, cream 1 stick of softened butter and 3 tbs of crumbled blue cheese together. Once they are thoroughly mixed, shape into a loaf on waxed paper, roll it up like a candy and stick in the freezer for 20 minutes. I sliced pats of the blue cheese butter off and used them on the steak, green beans, potatoes and bread. Fattening, but oh, so delicious.
