Warm Spinach Salad Recipe

Warm Spinach Salad |The Halfway HomemakerThis salad is a great addition to any meal, but also stands alone as a light dinner. The warm dressing is a great foil for fresh spinach leaves.


  • 2 cups fresh spinach leaves, washed and dried
  • 3 pieces bacon
  • 1 egg
  • 1 tbs apple cider vinegar
  • 1 tbs prepared mustard
  • 1 tbs sugar
  • Pepper and salt to taste

Place spinach in a large bowl. Cook bacon in a nonstick skillet until crisp. Remove bacon and drain, reserving drippings in skillet. In a separate bowl, whisk egg, apple cider vinegar, mustard and sugar. Pour mixture into skillet with bacon fat still in it. Cook on medium heat, stirring constantly until mixture is opaque and egg is cooked through. Mixture should look like a thick slurry, not scrambled eggs. Pour mixture from skillet over spinach and toss well. Crumble bacon over mixture and toss. Salt and pepper to taste. Serve immediately.
